Swedish 1 ½ lb Limpa for Bread Machine

1 cup hot water
1 teaspoon salt
4 tablespoons honey
1 tablespoon bacon grease
1 teaspoon caraway seed
½ teaspoon fennel seed
½ teaspoon anise seed
zest of one orange
2 tablespoons orange juice
2 cups bread flour
1 cup rye flour
1 ½ teaspoon bread machine yeast

Select 1.5lb loaf and start the bread machine.

Keep an eye on the dough during the mixing and add more flour or OJ as needed to make a nice round and not too sticky dough.

This is interesting, the orange juice part is intriguing.
I may have to have a go at this, is it a traditional recipe?

Obviously bread machines are not traditional.
I’m not sure how old “limpa” is, but it’s something that is common in swedish grocery stores. This recipe is an amalgamation of bread machine rye bread and some recepies for limpa I found online, and a little bit of experimentation I did myself.

Do you have the recipe in metric? I think I will try it with sourdough.

1 cup is just under 250ml.
