I just tried with a fully charged 14500 3.7V battery and unfortunately it led to the same issue

Yes, that’s normal. 5V strips are the standard.
From looking at the photos, you’re almost following the wiring diagram
Your probe is hooked to LED3, but generally LED2 and LED3 are bridged in practice and the main blade runs from there. So I suppose you’d need two probes that join at or before the LED strip to match the the diagram.
